  • 1 medium head green cabbage (about 2 lbs), chopped
  • 2 medium carrots (about 1 cup), diced
  • 3 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Chop cabbage, carrots, celery, onion, and garlic into bite-sized pieces.
  2. In a large pot over medium heat, heat 2 tablespoons of olive oil. Sauté the onion and garlic until translucent (about 5 minutes).
  3. Add chopped cabbage, carrots, and celery; stir to combine.
  4. Pour in diced tomatoes with juices and add enough vegetable broth to cover the veggies by an inch. Season with thyme, bay leaf, salt, and pepper.
  5. Bring the mixture to a boil then reduce heat and let it simmer gently for about 20 minutes until the vegetables are tender.
  6. Remove from heat, discard the bay leaf, serve hot, garnished with fresh herbs if desired.
