  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, salt, and oats; gradually mix into the wet mixture. Fold in cranberries.
  5. Drop rounded tablespoons of dough onto prepared sheets about two inches apart.
  6. Bake for 10-12 minutes until golden around edges but soft in the center; let cool on sheets for five minutes before transferring to wire racks.
  7. Melt white chocolate chips and dip half of each cookie; place back on parchment to set.
