  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 tbsp unsalted butter, softened
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In one bowl, whisk together flour, cocoa powder, and sugar. In another bowl, beat eggs until thick and pale. Fold egg mixture into the dry ingredients gently.
  3. Spread batter evenly in the prepared pan. Bake for 12-15 minutes until springy.
  4. Once baked, cool slightly then roll the cake using a powdered sugar-dusted kitchen towel. Let it cool completely in the rolled shape.
  5. Whip heavy cream with vanilla and powdered sugar until soft peaks form. Unroll the cake, spread filling evenly, and re-roll tightly seam-side down.
  6. Dust with cocoa or powdered sugar before serving.
