  • 2 large eggs
  • 1 cup grated Parmesan cheese (100g)
  • 4 green onions, chopped
  • Salt and pepper to taste
  • Oil for frying (about 1/2 cup)

Instructions

  1. Grate the zucchini and sprinkle with salt; let sit for 10 minutes to draw out moisture.
  2. Squeeze excess liquid from the zucchini using a clean kitchen towel.
  3. In a bowl, combine drained zucchini with eggs, flour, Parmesan, green onions, salt, and pepper until well mixed.
  4. Heat oil in a skillet over medium heat until hot.
